About The Big Dipper

Glen & SharonGlenn Charban has been baking bread for over 20 years. In 1999 he and his wife moved from Toronto, to Paisley, Ontario, trading in the hustle and bustle of the city, for the serenity and gentle pace of a country village. Being great lovers of good food, they are very particular about everything they make. Their artisan bread is made in the old world tradition of Europe using fresh, local, natural ingredients. The artisan breads are sugar free, fat free and dairy free (except: baguettes, farmers, Italian). Each loaf is shaped by hand and baked on a stone hearth.

They also have a great selection of gourmet baked goods that are made in the same old fashioned way using natural, fresh ingredients your grandmother would recognize.

1: a worker who practices a trade or handicraft:Craftsperson
2: one that produces something (as bread or cheese) in limited quantities often using traditional methods

Artisan bread is not a brand name and it's unlikely that you will find artisan bread in your local supermarket. The best way to describe artisan bread is to think about the person who makes the bread. A craftsperson who is trained to the highest ability to mix, ferment, shape and bake a hand crafted loaf of bread. Also think about the place where the bread is made. In a small artisan bakery it is possible for each worker to understand the whole process of making the bread rather than bread which is made in a large factory where each worker is trained to operate a machine that completes one portion of the process.
